Spring Herb & Goat Cheese Frittata

A Simple Meal for the Day After Mother’s Day

Mother’s Day may be over by the time you read this.

The flowers may already be on the counter. The cards may be tucked away. The brunch dishes may be washed and put back in the cabinet.

But mothers do not stop being special when the day ends.

Neither do the people who care, nurture, feed, listen, show up, and hold everything together.

So maybe tomorrow is still a good day to make something simple and nourishing.

A good frittata feels like spring. Fresh herbs. Eggs with deep golden yolks. A handful of greens. Something warm pulled from the oven and shared without much fuss.

It feels cared for.

And sometimes that is exactly what the people who care for everyone else need most.

Why This Meal Works So Well

Eggs provide protein, healthy fats, choline, vitamin B12, and nutrients that support steady energy and fullness.

Greens and fresh herbs bring fiber, minerals, and brightness. Goat cheese adds richness without making the meal feel heavy.

Together, this meal gives your body what it actually needs: protein, fat, and fiber.

You do not need another holiday to nourish someone well.

You just need real food made with care.

Spring Herb & Goat Cheese Frittata Recipe

Ingredients:

10 pasture-raised eggs

1/4 cup whole milk or heavy cream

1 small onion, thinly sliced

1 cup fresh spinach or arugula

2 ounces goat cheese

1 tablespoon fresh chives, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon fresh thyme

1 tablespoon butter or olive oil

Salt and black pepper to taste

Instructions:

Preheat the oven to 375°F.

In a bowl, whisk together the eggs, milk, salt, pepper, and fresh herbs.

Heat a cast iron skillet over medium heat. Add the butter or olive oil and onion. Cook until soft and lightly golden.

Add the spinach or arugula and cook just until wilted.

Pour the egg mixture into the skillet and gently stir once or twice.

Crumble goat cheese across the top.

Transfer the skillet to the oven and bake for 12 to 15 minutes, or until the center is just set.

Let rest for a few minutes before slicing.

Serve with fresh berries, roasted potatoes, or a simple salad with olive oil and lemon.

A Simple Reminder

Mother’s Day may be one day on the calendar.

But care does not have to be.

Tomorrow can still be a good day to feed someone well.

Mothers are worth celebrating on ordinary days too.
