Sausage, Egg & Sweet Potato Skillet Recipe

Ingredients

1 pound breakfast sausage

2 medium sweet potatoes, diced

1 red bell pepper, diced

1 small onion, diced

6 eggs

1 tablespoon olive oil or avocado oil

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 teaspoon sea salt

1/4 teaspoon black pepper

Fresh parsley or green onions for garnish (optional)

Instructions

Heat a large skillet over medium heat. Add the sausage and cook until browned, breaking it into crumbles as it cooks. Remove from the skillet and set aside.

Add the olive oil to the skillet. Add the diced sweet potatoes and cook for 8 to 10 minutes, stirring occasionally, until they begin to soften.

Add the bell pepper and onion. Cook for another 4 to 5 minutes until the vegetables are tender.

Return the cooked sausage to the skillet. Add the garlic powder, smoked paprika, salt, and pepper. Stir well to combine.

Create small wells in the mixture and crack the eggs directly into the skillet.

Cover and cook for 4 to 6 minutes, or until the eggs are cooked to your preferred doneness.

Garnish with fresh parsley or green onions and serve warm.
