Protein-Packed Summer Chicken Pasta Salad Recipe
Ingredients
12 ounces chickpea or whole wheat pasta
2 cups cooked grilled chicken breast, diced
1 cup cherry tomatoes, halved
1 cucumber, diced
1 red bell pepper, diced
1/4 cup red onion, finely diced
1/2 cup crumbled feta cheese
1/4 cup extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 teaspoon black pepper
Instructions
Cook pasta according to package directions. Drain and allow to cool.
In a large bowl, combine the cooled pasta, grilled chicken, tomatoes, cucumber, bell pepper, red onion, and feta.
