Breakfast Hash with Eggs, Beef, and Potatoes
A Meal That Actually Fuels You
Breakfast is often the first thing sacrificed when life gets busy.
A cup of coffee replaces a meal.
Maybe there's a granola bar on the drive to work.
Maybe breakfast gets skipped altogether.
It happens more often than most people realize.
The problem is that many people spend the first half of the day asking their bodies to do a lot without providing much fuel in return.
By mid-morning, energy starts fading.
By afternoon, cravings begin showing up.
And by evening, hunger can feel impossible to ignore.
This is where a real breakfast can make a difference.
Not a perfect breakfast.
Just a nourishing one.
Why This Meal Works
One of the simplest ways to support steady energy is by combining protein, healthy fats, and quality carbohydrates in the same meal.
Protein helps support muscle maintenance and repair.
Fat helps create satisfaction and helps meals feel more sustaining.
Potatoes provide carbohydrates that the body can use for energy throughout the day.
Together, they create a meal that feels substantial without being complicated.
It's the kind of breakfast that works well after a morning on the farm, before a long workday, or anytime you need something that truly sticks with you.
Breakfast Hash with Eggs, Beef, and Potatoes Recipe
Ingredients
1 pound ground beef
4 medium potatoes, diced
1 small onion, diced
1 red bell pepper, diced
2 tablespoons olive oil or avocado oil
6 eggs
1 teaspoon sea salt
1 teaspoon garlic powder
1/2 teaspoon black pepper
Fresh parsley for garnish (optional)
Instructions
Heat a large cast iron skillet over medium heat.
Add the oil and diced potatoes. Cook for 10 to 12 minutes, stirring occasionally, until they begin to soften and brown.
Add the onion and bell pepper. Continue cooking for another 4 to 5 minutes.
Push the vegetables to one side of the skillet and add the ground beef. Break it apart with a spoon and cook until browned.
Stir everything together and season with salt, garlic powder, and pepper.
Create small wells in the mixture and crack the eggs directly into the skillet.
Cover and cook until the eggs reach your preferred doneness.
Garnish with fresh parsley and serve immediately.
Why These Ingredients Matter
Beef provides high-quality protein along with nutrients like iron, zinc, and vitamin B12, which play important roles in energy production and muscle function.
Eggs add additional protein along with choline and other nutrients that support overall health.
Potatoes are often overlooked, but they provide potassium, carbohydrates, and fiber that help support energy and recovery.
The result is a meal built from simple ingredients that work together to fuel the body.
A Simple Reminder
You don't need complicated meal plans to support your health.
You don't need perfect eating habits.
Sometimes what the body needs most is enough.
Enough protein.
Enough nourishment.
Enough fuel to support the work you're asking it to do.
And sometimes that starts with breakfast.
